Yummy Pikelets are good for the soul!
Thick and fluffy and perfect for breakfast on these cold and frosty mornings. I also freeze these for the lunch box, they are a favourite with my kidlets!
Many of you have asked for the recipe in the past, and I just eyeball them, but today I’ve measured. If you follow me on Snapchat, sorry if you’ve been waiting.
1.5 cups of self-raising flour
1 cup of full cream milk
Optional – 1-2 tablespoons of sugar. I don’t add sugar to mine as we top with Nutella etc so they don’t need it.
Whisk the eggs and milk in a large bowl, add the flour (and sugar if you opt for it) and whisk until thick and combined.
On low-medium heat, spray a non stick pan with cooking spray (you can use butter if you like too) and add 1/3 of a cup of mixture to the pan. They won’t get many bubbles, so flip after one or two appear or when golden. Once flipped they will puff up, they are so light and fluffy.
Serve hot with butter, jam, Nutella or honey etc.
