Veggie Fritters

Veggie fritters that are kind of like savoury pikelets were an absolute hit with my little Darcy bear today. I made this recipe up as I went along, but will certainly be making them frequently now, they are packed full of the healthy good stuff and flavour for the win!


These Veggie Fritters are not just ideal for babies and toddlers, but the entire family. I enjoyed mine topped with Greek yoghurt and sliced spring onions, and my daughter devoured hers topped with a poached egg. Ideal for breakfast, lunch or brunch, and perfect for the school lunch box. To fancy them up a tad you could serve them with sour cream, sliced ham or prosciutto or smoked salmon.


Ingredients –

1 cup of self-raising flour
1 egg
1/2 a cup of milk
1 stalk of spring onion finely sliced
1 medium carrot grated
1 medium zucchini grated
1/4 cup of grated tasty cheese
1/2 a cup of frozen peas
sprinkling of Vegeta (optional but adds a lovely flavour)
black pepper
Olive oil


Method –

In a large bowl, add the flour, egg and milk and mix with a fork until combined. Add the Vegeta, pepper, cheese and all the veg and stir until well incorporated. Drizzle a little olive oil in a frypan over low to medium heat, and add a good scoop of the mixture pressing down slightly with the back of a spoon. Cook for a few mintues, flip and cook the other side, pressing down with a spatula as you go.
Super quick and easy and I imagine they would freeze well too.
