Paffins – Baked Pancake Muffins

These are a baked pancake mix that puff up like little muffins. They are super quick and easy to make and a great little treat for the lunch box. My go to if we have far too much chocolate leftover after Easter and they are great for afternoon tea for the kids too.

We’ve added a few mini solid Easter eggs, so a great way to use them up if you have an abundance. We have also added broken Choc eggs, blueberries and hundreds and thousands to the others.
I don’t know where these originated to give credit, but they are all over Pinterest.

Ingredients –
Store bought shaker packcake mix
Leftover Easter eggs, mixed berries or sprinkles
Cooking Spray

Method –
Add water to your pankcake shaker as per packet instructions.
Spray a mini muffin tray with non stick cooking spray and pour the pancake mixture in filling around half way. Add your toppings and into a 160c fan forced oven for 15minutes and that’s it. They puff up like mini muffins and they are so delicious.
