My Basic Cookie Dough Recipe

My basic cookie dough recipe is soft, chewy, decadent, and so close in texture to my favourite cookies from Subway!


Using this recipe as a base, you can get creative with your favourites. Add chocolate chips, m&m’s, Mars Bars or Snickers, white chocolate & macadamia nuts or whatever your heart desires. Today we have made American Snickerdoodles by rolling in cinnamon and sugar prior to baking.

(This is the same dough I have used in my Snickers and Rocky Road cookies I’ve shared over on Facebook  in the past).

Ingredients –
150g soft unsalted butter
1 cup of white sugar
1 cup of brown sugar
2 large eggs or 3 if they are small
1 teaspoon of vanilla
1 teaspoon of bi-carb
2.5 cups of plain flour

Method –
Pre-heat oven to 180c fan forced.
In a large bowl, cream together the butter and sugar with a handheld mixer until combined. Add the eggs and vanilla and mix again for 30 seconds.
Add the flour and bi-carb to the sugar mixture, mixing with a wooden spoon. Add your chosen chocolates and fold through the mixture.

Roll into balls, and place on a baking paper lined tray and flatten slightly. Leave a gap as they will spread when baking. Bake for 10-12 minutes or until golden. They will be very soft, but will firm upon cooling.
Leave them on the baking tray for 5-10 minutes before transferring to a wire rack to cool completely.
