Everyone needs a good mini quiche recipe in their repertoire whether it be for gatherings, the school lunch box or birthday parties, and this one won’t disappoint.
Fist pump on as this recipe makes one dozen mini quiche from one sheet of puff pastry too. Yes one sheet, not a typo, it’s a little tip I’ve acquired over the years in my baking obsessed yet frugal ways.
1 sheet of store bought puff pastry thawed
1 rasher of middle bacon finely diced
3 large eggs
Half a cup of grated tasty cheese
2 tablespoons of full cream milk
1/4 teaspoon of Vegeta Gourmet stock powder
*If you prefer to omit the bacon and make this recipe vegetarian you can add diced capsicum, mushrooms, corn kernels in it’s place.
Pre-heat oven to 200c fan forced.
Lightly spray each hole of a cupcake tray with cooking spray. Using a drinking glass, cut 9 rounds from the sheet of puff pastry. Don’t discard the offcuts, roll into a ball and lay between the plastic the puff pastry comes in, roll out with a rolling pin and cut another 3 rounds and place into each hole of the tray pressing in the base.
Evenly distribute the diced bacon between the pastry. To a mixing bowl gently whisk together the eggs, milk and Vegeta and pour into each pastry disk.
Top with grated tasty cheese and bake for 12-15 minutes or until the pastry is golden.
They freeze beautifully making them perfect for the kids lunch box, and make a great quick and easy dinner when served with a garden salad.
