Minestrone Soup would have to be my children’s favourite soup and I love it’s so hearty and filling on a cold winters night.
1 can of tomato soup
1 can of diced or crushed tomatoes
I medium brown onion finely diced
1 heaped teaspoon of crushed garlic
2 celery stalks finely diced
2 small carrots diced
1 cup of diced ham or bacon pieces (You can buy it in the deli)
1 bay leaf
1 large potato diced into small cubes
2 chicken stock cubes
2 cups of dry pasta
Salt and pepper to season
1 can of 4 bean mix (rinse well)
In a pot sweat off your onions, celery and bacon. When soft add your garlic, tomatoes, stock cubes and cover with 2 litres of water and bring to a boil and season well.
Then add your carrots and potatoes and cook for 10 minuts. Then add your pasta and can of mixed beans and cook until past is just tender and serve. You don’t want to leave it to cook any longer as the heat will continue to cook the pasta even once removed from the heat.
Serve with crusty bread, garlic bread or enjoy as is.
