Loaded Wedges are a winning lazy dinner and would be perfect for state of origin. If feeding a crowd, omit the chicken and serve as a side to steak and corn on the cob.
750g bag of wedges
1 spring onion finely sliced
250g sour cream
2 rashers of middle bacon diced
1.5 cups of grated cheese ( I use mozzarella)
1 bbq chicken breast roughly sliced
Ayam sweet chilli sauce
Fresh chives to garnish
Preheat oven to 200c fan forced.
On a baking paper lined sheet tray, place the wedges in a single layer and bake for 25 minutes.
Add the chicken to the wedges, followed by the bacon and then the cheese and bake for a further ten minutes or until the cheese is melted.
