These Choc Chip & Cinnamon French Toast Fingers are perfect for Mother’s Day or any other special breakfast or brunch throughout the year. My kids love them served with a scoop of vanilla ice cream and a drizzle of maple syrup for dessert too, they are just scrumptious.
They are super easy to make, with assistance my 6 year old has mastered them and the brioche rolls can be found at both Aldi and Woolworths. If you can find them at your local supermarket you can use regular brioche in their place.
1 packet of chocolate chip brioche rolls
4 large eggs
1/2 cup of milk
1 teaspoon of vanilla extract
1/3 cup of white sugar
1 teaspoon cinnamon
2 tablespoons of butter for frying.
*Optional – you can serve with mixed berries, syrup, or bowl of Nutella.
Cut the brioche rolls in half lengthways and then in half again.
Whisk the eggs, milk and vanilla together in a large bowl and set aside.
Combine the sugar and cinnamon in a bowl and set aside.
Place a small knob of butter into a frypan over medium heat and once melted quickly dunk the brioche into the egg mixture, shake off the excess and then into the pan. Be sure to fry all four sides (they only take around a minute or two to be done) so just keep an eye on them.
Once cooked place them straight into the bowl of cinnamon sugar and roll to coat evenly or use a teaspoon if you prefer and shake off the excess before serving.
I mean come on, look at that goodness.
You can also pretty up the plate by adding a few edible wafer daisies too cos cute.
Serve, inhale and enjoy.
