Chicken & Vegetable Soup = a winter staple!
1 large brown onion finely diced
3 cloves of garlic crushed
300g chicken thigh diced into small cubes
1 leek halved and finely sliced
2 stalks of celery finely sliced
1 large carrot peeled & thinly sliced
2 cups of red lentils (rinsed)
2 tablespoons of Vegeta
2 chicken stock cubes
2 litres of water
White pepper to season
Add a few tablespoons of water to a soup pot and sauté the onion, garlic, leek, celery and chicken for 4-5 minutes.
Add the Vegeta, stock and water (season with pepper) and bring to the boil. One bubbling add the carrot and lentils, reduce the heat to low, pop on the lid and cook for 30 minutes stirring occasionally.
Serve with crusty bread and realise winter isn’t all that bad.
