Cheesy Noodle & Veggie Slice

Cheesy noodle & veggie slice, a great alternative to a sandwich for the lunch box, and makes for quick and easy dinner! It’s all the yum’s served hot or cold.


I was taught how to make this as a teen and I’ve just changed it up over the years and my kids devour it, even my 4 year old who has declared war on all vegetable consumption.

You can add or omit anything you like, and this is a great slice to make before your next grocery shop to use up all your veggies so nothing goes to waste.
I never make it exactly the same as I generally use what I have on hand, so this is a rough guide. You can use 2 minute noodles, spaghetti, or any pasta you like, (macaroni works well).


Ingredients –
Two packets of 2 minute noodles or 150g of spaghetti
1 large brown onion finely diced
5 slices of shortcut bacon diced
1 cup of grated tasty cheese
1/2 teaspoon of Vegeta
4 eggs
2 tablespoons of milk
Any veg you like, approximately 3-4 cups worth. You can use corn, grated carrot, zucchini, diced capsicum, sliced mushrooms, peas, celery, just whatever you like and what you have on hand.


Method –
Cook your noodles or pasta until tender, drain and set aside.
In a frypan with a little olive oil, cook your bacon and onion for two minutes, add the Vegeta and the veggies and season with pepper and cook on medium heat for 5 minutes.


Add the noodles to the frypan mix and stir to incorporate.
Spray a baking dish with cooking oil, add the noodle and veggie mix and smooth over.

In a bowl, whisk your eggs and milk together and pour over the mixture. The eggs should almost cover the mixture, so depending on your dish size or vegetable quantity, just add more if need be.


Top with grated cheese and bake at 160c fan forced for 30- 40 minutes or until golden and there is no wobble.


Slice and enjoy.
