Big Mac Salad

Holy crap and balls this Big Mac Salad is good, if you ever hear someone say “you don’t make friends with salad” shove this in their face hole and wait for a retraction!

I had meal planned homemade Big Macs for dinner tonight but forgot to buy burger buns which lead to this salad being created.
Here’s what you’ll need to make it and easily serves 6 people.

This salad also goes well in wraps and flatbreads.

Ingredients –
1 small iceberg lettuce
500g beef mince
3 teaspoons of dried onion flakes
8 pickles or gherkins thinly sliced
1 cup of grated tasty cheese
Coles Special burger sauce
2 slices of bread cut into small cubes
1 teaspoon olive oil
1 tablespoon of sesame seeds
Salt & pepper.

Method –
Place the onion flakes in a small bowl, add 1/4 cup of water and leave to soak and reconstitute.
Wash the lettuce, remove the core and thinly slice. Place in a salad spinner to remove any excess water and place into a large salad bowl or onto a serving platter.

Add half the olive oil to a frypan and cook the bread cubes for around two minutes moving the pan often and set aside. Add the remaining oil to the pan and cook the beef mince (season with salt & pepper) on high heat for around 4 minutes or until cooked breaking it up as you go. Drain any excess fat from the mince and set aside to cool slightly and drain the water from onions.
Drizzle a good amount of burger sauce over the lettuce and then sprinkle over the mince, cheese, onions, croutons and pickles. Add another good drizzle of burger sauce over the entire salad (be generous) and sprinkle over sesame seeds.
