Bean Salad

Bean Salad is one of my kids favourites, they absolutely love this salad and it makes a delicious side to enchiladas. It’s quick and easy to put together and to pimp it up and make a meal of it, you could always add some grilled or shredded Bbq chicken.

Ingredients –
400g can of four bean mix
420g can of corn kernels
1 Lebanese cucumber quartered and diced
1 diced tomato
1/4 Spanish onion finely diced
1 spring onion finely sliced
1/3 cup of sliced black olives
1/4 cup of Paul Newman’s chipotle ranch dressing
Half an avocado sliced
Garnish with corriander if you have any.

Method –
Rinse the corn and mixed beans, drain well and add to a bowl. Add all other ingredients to the corn mix except the avocado and stir until the dressing is evenly distributed. Top with avocado and inhale.
I gave this recipe to a girlfriend last year and she used store bought salsa instead of the chipotle dressing as she didn’t have any on hand, and she swears by it. Mix it up, add or omit anything you please and you can also add cheese if you like too.
The chipotle ranch tastes almost identical to Subways southwest chipotle.
