This BBQ Meat Lovers Pasta Bake was created last year when I forgot to buy yeast for my Homemade pizza dough but had pasta and a jar of sauce on hand. It quickly became a family favourite and the perfect winter carby comfort food.
Ingredients – (Served 6 with leftovers)
1 large brown onion finely diced
2 cloves of garlic crushed
3 rashers of middle bacon diced
4 Italian sausages (you can use beef instead too)
250g beef mince
3 tablespoons BBQ sauce
300g large pasta shells
1 jar of Leggos pasta bake sauce (tomato and mozzarella flavour)
2 cups of grated mozzarella cheese
1 teaspoon olive oil
salt and pepper to season
Optional – You can add sliced mushrooms, olives and capsicum too if you like.
Pre-heat oven to 175c fan forced.
To a large pot of boiling salted water, cook the pasta as per packet instructions.
While the pasta is cooking, add the sausages to a frypan and cook for 3-4 minutes or until sealed. They don’t need to be cooked all the way through as they’ll be returned to the pan. Set aside and slice thinly once cool enough to handle.
Add the evoo to the frypan and cook the onion, garlic, mince, bacon and sausages for approximately 5 minutes over medium heat stirring often or until the mince is cooked.
Drain the pasta and return it to the pot. Add the jar of pasta sauce, the meat mixture, 2 tablespoons of bbq sauce, 1 cup of the mozzarella, season with salt and pepper and stir until well combined.
Place in a baking dish, squeeze over a little more bbq sauce, top with the remaining cup of cheese and bake for 10-15 minutes or until the cheese is melted.
