This Bake Tray breakfast is incredible!
A big breakfast for a crowd often involves multiple frypans, profanities and rage for me, so now I cook everything in the oven.
Preheat oven to 200c fan forced and line a large sheet tray with baking paper.
I opt for fatty middle bacon so nothing sticks (plus flavour factor) and add chipolatas, diced capsicum and halved mushrooms. You can add cherry tomatoes, sliced onions, and anything else your heart desires.
Bake for 20 minutes, then lower the oven temp to 170c and shuffle things around to make room to crack on the eggs and optional to add a few small curls of butter.
Bake for another 15 minutes or until desired egg cooked level and serve on a large bed of baby spinach leaves.
I added fresh chives and served with fried halloumi and English muffins and there’s now minimal washing up for the win.
