Veggie Bake is a great way to get more veggies into the kids, it’s relatively quick, super easy and a real crowd pleaser.
We enjoyed this tasty bake with a BBQ & salad for dinner tonight and it makes a lovely side to most meals. You can use pumpkin instead of sweet potato and omit the mustard if you prefer.
1 large zucchini
1 sweet potato
2 potatoes (I left the skin on)
1 tablespoon of melted butter
2 tablespoons of olive oil
1 teaspoon of Vegeta gourmet stock
1 teaspoon of whole grain mustard
Preheat oven to 200c fan forced.
Slice the potatoes and sweet potato thinly (half a cm) and slice the zucchini a little thicker as it will cook quicker.
Mix the dressing together in a small baking dish and toss the vegetables until they are well coated.
Stack the veggies on an angle and bake at 200c for around 35-45 minutes or until golden and tender when a knife is inserted.
Serve as is or sprinkle with a little grated Parmesan cheese at the table.
The perfect accompaniment to red meat, chicken or fish and ideal to cook in a webber if camping.
