Italian sausage & vegetable tray bake. One tray, quick and easy and absolutely delicious.
This recipe came about after we went on holidays around 7 years ago and the cabin we stayed in didn’t have a working stove top. It’s become a family favourite now, so I’m glad it wasn’t working lol
(Add or omit anything you please)
Italian sausages (or any that you like)
1 diced Spanish onion
1 large zucchini diced
3 Sweet Palermo peppers sliced (or 1 red capsicum)
A handful of mushrooms cut in half
1 bunch of asparagus spears halved
1/4 head of cauliflower
Small tub of Semi- sundried tomatoes
Vegeta vegetable seasoning and Italian herbs.
Optional – Danish feta and or shaved Parmesan cheese.
Line a baking dish with baking paper and add all your vegetables in a single layer. Drizzle with a few tablespoons of the oil from the sundried tomatoes and sprinkle on a little Vegeta and Italian herbs.
Place your sausages on top (we are using beef and garlic tonight as hubby defrosted the wrong ones), add the sundried tomatoes and bake at 180c fan forced for 35- 40 minutes. If your cauli starts to brown too much, just turn it over during baking.
Optional- when it’s ready, crumble on a little feta cheese and/or Parmesan.
*We have made it in the past with potatoes and pumpkin, just be sure to cut any root vegetables into small pieces so it cooks in time with the other veg. You can also add chorizo and speck, get creative with it.
This dish works for chicken as well, just brown your thigh fillets to seal them in a frypan first.
You can serve it with mashed potatoes, polenta, cous cous, quinoa or brown rice, crusty bread, or eat it just as is.
