Rocky Road Cookies with Clinkers, marshmallows and Turkish delight, need I say more lol
Very much a sometimes treat, and so close in texture to my favourite cookies from Subway!
150g soft unsalted butter
1 cup of white sugar
1 cup of brown sugar
2 large eggs
1 teaspoon of vanilla
2 teaspoons of bi-carb
2.5 cups of plain flour
1/4 cup of coconut
1/2 cup of Cadbury chocolate chips
1/2 cup of chopped Clinkers (12)
1 Fry’s Turkish delight bar chopped
1/2 cup of mini marshmallows
Optional – handful of nuts
Pre-heat oven to 180c fan forced.
In a large bowl, cream together the butter and sugar with a handheld mixer until combined. Add the eggs and vanilla and mix again for 30 seconds.
Add the flour and bi-carb to the sugar mixture, mixing with a wooden spoon.
Add the cononut, Clinkers, Turkish delight, marshmallows and choc chips and mix until evenly distributed.
Roll into balls, flatten the top slightly, and place on a baking paper lined tray and bake for 10-12 minutes or until golden. They will be very soft, but will firm up upon cooling.
Leave them on the baking tray for 5 minutes before transferring to a wire rack to cool completely, although so soft and goey and tasty while warm.
Enjoy with a cuppa and then go for a 167k run, because balance. 😆

I’ve been making this for as long as I can remember, and it’s always a crowd pleaser.
Perfect for Christmas, Father’s Day, Teacher gifts and Easter. Who am I kidding, it’s a great treat all year round, but everything in moderation right……
I add soft lollies to my Rocky Road as it makes it extra delicious, and this time I’ve used strawberries and cream.Over the years I’ve tried Raspberries, banana lollies, Pineapple lollies, Chicco babies, Pineapple lumps and snakes, and they all work. Get creative and add whatever you like. A few crushed shortbread biscuits also make a lovely addition.
- Please Note – This recipe calls for Snickers bars which contain nuts, so if you or anyone in your family have allergies, you can most certainly omit them and use Milky Ways or Mars Bars in their place). I’ve tried both, and they are just as good.
What you’ll need.
One packet of mini Snickers bars (Packet contains 12 bars), and cut each bar into 8 small pieces.
400g good quality milk chocolate, or chocolate melts (I use Cadbury).
16 Pascall marshmallows cut in half 16 strawberries and cream lollies cut into3
1/4 cup of desiccated or shredded coconut.
Either in the microwave or using a double boiler, melt your chocolate in a large bowl stirring regularly.
When melted, carefully remove from the heat and add your snickers, marshmallows, coconut and lollies. Mix well (and fast) and press into a slice tray lined with baking paper.
Pop in the fridge to set for approximately 45 minutes. Once firm, leave to stand on the bench for 10 minutes, and then cut into small squares.
