I’ve been making this for as long as I can remember, and it’s always a crowd pleaser.
Perfect for Christmas, Father’s Day, Teacher gifts and Easter. Who am I kidding, it’s a great treat all year round, but everything in moderation right……
I add soft lollies to my Rocky Road as it makes it extra delicious, and this time I’ve used strawberries and cream.Over the years I’ve tried Raspberries, banana lollies, Pineapple lollies, Chicco babies, Pineapple lumps and snakes, and they all work. Get creative and add whatever you like. A few crushed shortbread biscuits also make a lovely addition.
- Please Note – This recipe calls for Snickers bars which contain nuts, so if you or anyone in your family have allergies, you can most certainly omit them and use Milky Ways or Mars Bars in their place). I’ve tried both, and they are just as good.
What you’ll need.
One packet of mini Snickers bars (Packet contains 12 bars), and cut each bar into 8 small pieces.
400g good quality milk chocolate, or chocolate melts (I use Cadbury).
16 Pascall marshmallows cut in half 16 strawberries and cream lollies cut into3
1/4 cup of desiccated or shredded coconut.
Either in the microwave or using a double boiler, melt your chocolate in a large bowl stirring regularly.
When melted, carefully remove from the heat and add your snickers, marshmallows, coconut and lollies. Mix well (and fast) and press into a slice tray lined with baking paper.
Pop in the fridge to set for approximately 45 minutes. Once firm, leave to stand on the bench for 10 minutes, and then cut into small squares.
