Fried Rice, always a winner and super quick and easy to make at home.
(The secret ingredient to make it taste just like a restaurant is the Won Ton soup mix).
2 cups of rice (I use jasmine)
1 cup of frozen peas
4 slices of shortcut bacon diced
3 spring onions finely sliced
2 tablespoons of peanut oil (or you can use vegetable)
1 tablespoon of won ton soup mix
2 tablespoons of Lee Kum Kee soy sauce
Rinse and cook your rice and set aside to cool. (While it’s cooking you can prep your other ingredients).
Whisk 4 eggs and cook in your wok or fry pan like you would an omelette and then place on a chopping board and dice into squares. Then cook your bacon and set aside.
Heat your oil in the pan, and add your rice and won ton mix and stir to combine. Add your frozen peas, soy sauce, spring onions and bacon and cook for s few minutes over medium heat mixing well.
Turn the heat off, stir through your egg and it’s ready.
* for best results, use cooked cold rice. If you can cook it in the morning or night before and leave it in the fridge until your ready to make your fried rice, it’s a winner.
If you have leftover roast pork it makes a lovely addition to the rice and you can also add other veggies too, shredded carrots and leek are glorious.
