Easy Sugar Cookies!
Only 4 ingredients and they are delicious.
I played around yesterday trying to create a simple recipe that holds its shape when baked, and these are a winner. This recipe isn’t overly sweet so they are balanced when topped with fondant or royal icing.
250g soft unsalted butter
1 cup of icing sugar
1 teaspoon of vanilla extract
2.5 cups of plain flour
In a large bowl using a hand held mixer, beat the butter for 2 minutes. Add the icing sugar & vanilla and whip again for another two minutes. Sift in the flour, use your hands to combine and knead as you go and roll into a ball. Wrap in glad wrap and into the fridge for one hour.
Roll the dough out to 1-2cm thickness, press in your cookie cutters, place onto a baking paper lined tray and bake for 15 minutes at 160c fan forced. They won’t colour and that’s perfect, they are lovely and soft and have a creamy flavour.
Let them cool slightly on the tray before transferring to a wire rack to cool completely before icing.
For icing options, you can either make or buy royal icing from the supermarket or use fondant. I opt for fondant as it’s super quick and easy to roll out, cut your shape and adhere to your cookie with a little water on a paint brush.
