Creamy Chicken, Bacon & Mushroom Pasta is a little naughty (ok a lot) but damn it’s good. As per requested, here’s my recipe. Again, it’s not a healthy one, but everything in moderation right…..
500g diced chicken breast or thigh fillets
1 brown onion diced
Half a packet of fettuccine
6 sliced mushrooms
6 slices of shortcut bacon
1 teaspoon of crushed garlic
1 teaspoon of Vegeta stock powder
1 cup of light or full fat thickened cream
Cup of grated cheese
1-2 cups of milk
Pepper to season (lots of pepper)
Fresh herbs if you have them.
In a large fry pan cook onion and chicken in a little olive oil.
Boil your pasta and set aside.
Once chicken is cooked add Vegeta, garlic, mushrooms and bacon and cook for a few minutes. Add in pepper, your cream and milk and cook on high heat until bubbling and starts to thicken slightly. Reduce heat to a simmer, add grated cheese, stir well and cook for 5 more minutes before adding your fettuccine. (If it isn’t looking very creamy add a dash more milk).
Stir well and turn off the heat and leave in the pan for a little while to allow the pasta to soak up the creamy goodness.
Serve with a little grated Parmesan or just as is.
You can add anything you like to this. We sometimes add diced asparagus, peas, and even baby spinach leaves.
