Cheesy Corn Fritters are a huge hit in our house. I’ve been making these for as long as I can remember, and my kids and Hubby love them just as much as I do. They remind me of the filling in a corn jack, they are super quick and easy and absolutely scrumptious.

410g can of Golden Circle creamed corn
1/2 cup of plain flour
1/2 cup of light grated tasty cheese
1 stalk of spring onion sliced
1/2 teaspoon of Vegeta gourmet stock
Olive oil to fry
In a bowl, add the creamed corn, egg, cheese, spring onion, Vegeta and black pepper and stir. Add the flour and stir with a spoon until it’s well combined.
In a frypan on low to medium heat, and a drizzle of olive oil, and add tablespoons of the mixture pressing down with the spoon until they are around 1cm in thickness and somewhat resemble a round or oval shape. Cook for 1-2 minutes or until golden and flip to cook the other side.
Serve hot, they are great as is, or serve with a dollop of sour cream, sweet chilli sauce or even guacamole.
For a quick and easy lunch serve on a bed of salad greens.
They are great for the Lunchbox too and are delicious cold, just store in an airtight container in the fridge for up to 4 days.
